Canned Apple Pie Filling Recipe: A Delightful Delight

Ingredients: - 6 quarts apples (peeled, cored, and sliced - approximately 30 medium-sized apples) - 5 cups sugar - 1 ½ cups Clear Jel (Cook Type only) - 1 Tablespoon ground cinnamon - 1 teaspoon ground nutmeg - 7 ½ cups water - ¾ cup lemon juice (bottled lemon juice)

Instructions:

1. In a large pot, combine the sugar, Clear Jel, cinnamon, nutmeg, and water. Cook over medium heat until the mixture thickens, stirring frequently to prevent scorching.

2. Add the lemon juice and continue cooking for one minute.

3. Carefully add the apple slices and stir gently. Heat for 3-5 minutes on low until the apples are heated through.

4. Remove the mixture from heat and fill prepared jars, leaving 1 - 1 ¼ inch of headspace in each jar.

5. Use a small spatula to remove any air pockets or air bubbles in the jars.

6. Wipe the jar rims, place the canning lids and rings on the jars.

7. Process the filled jars for 25 minutes in a boiling water bath (adjust the processing time for your altitude as follows: 1,001-3,000 ft. add 5 minutes, 3,001-6,000 ft. add 10 minutes, 6,001-8,000 ft. add 15 minutes, 8,001-10,000 ft. add 20 minutes).

8. After the processing time is complete, turn off the heat and allow the jars to remain in the hot water for 5-10 minutes. This will help prevent siphoning.
